Easy Baked Spinach Artichoke Dip

This easy baked spinach artichoke dip is irresistibly creamy, super cheesy, loaded with sautéed spinach and marinated artichoke hearts and packed with flavor. This crowd-pleasing recipe can be prepared ahead of time.

  • 1 tablespoon olive oil
  • 4 garlic cloves, minced
  • 11 cups fresh baby spinach, coarsely chopped
  • 8 ounces full fat cream cheese, softened
  • 1 ½ cups Gouda cheese, shredded
  • 1 ½ cups Parmesan cheese, grated
  • 1 ½ cups marinated artichokes, coarsely chopped
  • 1 cup mayonnaise
  • ¼ teaspoon pepper
  • ⅛ teaspoon cayenne pepper

Instructions

  1. Adjust the oven rack to the middle position and preheat the oven to 400°F.
  2. Heat the olive oil in a large skillet and cook the minced garlic for about 30 seconds – until its fragrant.
  3. Add in the fresh baby spinach until wilted and the excess moisture has evaporated. This usually takes about 3-4 minutes.
  4. Remove the skillet off the heat and add in the softened cream cheese and stir until melted and completely combined.
  5. Next stir in Gouda cheese, Parmesan cheese, marinated artichokes, mayonnaise, pepper, and cayenne until combined. Transfer to a 2-quart baking dish. Smooth out the top with rubber spatula and sprinkle with some more cheese if desired.
  6. Bake until you start to see some golden-brown spots and bubbling around edges, about 20 minutes. Let cool for 10 minutes and enjoy!

Notes

To Make Ahead: You can prep this dish a day in advance by following the instructions to Step 2. Let dip cool completely. Cover baking dish with plastic wrap and refrigerate. When ready to bake, let the dish come to room temperature for about 30 to 60 minutes and bake as directed above.
