How to Roast Spaghetti Squash in the Oven

  1. Preheat oven to 400°F. Line a baking sheet with parchment paper.
  2. Using a chef's knife, cut the ends off the squash so that each end has a flat side.
  3. Next, you'll make a horizontal slice to cut the spaghetti squash in half. Do this by standing the spaghetti squash on its cut end and carefully cutting it into two even halves.
  4. Next, scoop out the seeds and stringy insides.
  5. Drizzle the cut side of the squash with olive oil, then sprinkle with salt and pepper.
  6. Place the spaghetti squash halves cut side down on the parchment paper lined baking sheet.
  7. Roast for 35 to 40 minutes or until lightly browned on the outside and fork tender on the inside. If your squash is larger, it may require more roasting time.
  8. Remove from the oven and flip the squash so that it's cut side up. When cool to the touch, use the tines of a fork to scrape and fluff the long strands from the squash.
