Pear Pecan Quick Bread

Pears and pecans are a match made in heaven. And this easy and delicious pear pecan bread will become your new fall favorite quick bread!

Ingredients

  • 3 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • Pinch of ground cardamon (optional)
  • 1 cup vegetable oil
  • 1 cup granulated sugar
  • 1 cup packed brown sugar
  • 3 eggs
  • 2 1/2 cups pears - peeled, cored and chopped
  • 1 cup chopped pecans
  • 2 teaspoons vanilla extract

Instructions

  1. Preheat oven to 350°F.
  2. Lightly grease two 8x4 inch loaf pans.
  3. In a large bowl, combine, all-purpose flour, baking soda, baking powder, salt, ground cinnamon, ground nutmeg and ground cardamon. Set aside.
  4. In a bowl of a stand mixer with the paddle attachment, combine the oil, granulated sugar, brown sugar and eggs. Beat well.
  5. Mix the vanilla into the wet ingredients.
  6. Gently stir in pears and pecans into the wet ingredients.
  7. Stir dry ingredients into the pear mixture; mix well.
  8. Pour batter into prepared loaf pans
  9. Bake in a preheated oven for 50-60 minutes, until a toothpick inserted into the center of the loaf comes out with a few moist crumbs. Check bread around the 50-minute mark so it doesn’t overcook.
