  • 1 (12 oz) package pre-cooked Italian sausage cut into 1/2-inch rounds
  • 1 medium red bell pepper sliced into strips (about 1 cup)
  • 1 medium yellow bell pepper sliced into strips (about 1 cup)
  • 1 medium zucchini cut into rounds (about 1 cup)
  • 8 oz cherry tomatoes (halved)
  • 1/2 red onion sliced into strips
  • 3 tablespoons extra virgin olive oil
  • 2 teaspoons red wine vinegar
  • 2 garlic cloves, minced
  • 1/2 teaspoon kosher salt
  • 1 tablespoon Italian seasoning
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon red pepper flakes
  • chopped fresh parsley, optional


  1. Preheat the oven to 400°F.
  2. While the oven is preheating, chop your vegetables.
  3. In a large bowl or directly on the sheet pan, add the chopped vegetables and drizzle in olive oil and red wine vinegar.
  4. Next, add the garlic cloves, kosher salt, Italian seasoning, black pepper and red pepper flakes. Toss to combine.
  5. Arrange ingredients on a baking sheet in a single layer.
  6. Bake for 25-35 minutes, turning halfway through.
  7. Remove from the oven and top with chopped parsley. Serve immediately.
