Peel and cube sweet potatoes and apples. Toss sweet potato cubes with olive oil and maple syrup and sprinkle with kosher salt, cinnamon, and brown sugar. Mix well.
Place sweet potatoes on the baking sheet in a single layer and roast for 20 minutes. While the sweet potatoes are baking, toss the cubed apples with olive oil and maple syrup.
Flip the sweet potatoes, then add the apple mixture and roast for an additional 20 minutes. Remove the pan from the oven and place ingredients into a serving bowl.
