Roll out chilled pie dough disc until it's about ⅛” thick and about 12” in diameter. Transfer to a pie plate, trim the edge, fold, and crimp. Put the pie plate in the refrigerator or freezer.
In a large bowl whisk sugars, flour, and spices. Add apples and lemon juice and gently toss to coat evenly. Roll out the second pie dough disc for the top of the pie.
Take the pie plate out of the refrigerator and spoon in the filling. Dot with small pieces of butter. Place second pie dough on top, brush with egg wash and sprinkle with sparkling sugar.
Cover edge of the pie with foil, place pie onto a cookie sheet and bake for 40 minutes. Remove foil and bake about 20 minutes more or until the filling is bubbly.
