Wash, trim and dry the asparagus and lightly brush with olive oil to coat. Roll out the pastry into a rectangle and transfer it to a prepared baking sheet.
Prick the puff pastry all over with a fork and brush with egg wash, making sure to get the edges of the pastry. Then zest and juice the lemon.
Next, mix egg, goat cheese, gruyere, Parmesan, herbs, lemon zest, and lemon juice. Spread the mixture over the puff pastry, top with asparagus and sprinkle with Parmesan.
Bake for 20 – 25 minutes, until the tart is golden brown and flaky.
