Zucchini Almond Butter Brownies

These healthier zucchini brownies are unbelievably rich, moist, and oh-so decadent. You will never know they were made with zucchini! These brownies come together in one bowl too!

Ingredients

  • 1 cup shredded zucchini* see notes
  • 1 large egg
  • ½ cup almond butter
  • ¼ cup honey
  • ½ cup brown sugar
  • 2 teaspoons vanilla extract
  • ½ cup cocoa powder
  • 2 tablespoons all-purpose flour
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • 2 tablespoons melted and cooled butter
  • cup dark chocolate chips

Instructions

  1. Preheat the oven to 350°F.
  2. Line an 8x8 inch baking pan with parchment paper and spray with nonstick cooking spray.
  3. In a large bowl, add shredded zucchini. Please make sure that you have squeezed out the excess moisture of the zucchini (see notes)*.
  4. Next, add egg, almond butter, honey, brown sugar and vanilla. Stir until smooth.
  5. Gently stir in cocoa powder, mixing until well incorporated.
  6. Next add in all-purpose flour, baking soda and salt and melted butter. Stir until well combined.
  7. Fold in dark chocolate chips
  8. Pour into prepared pan and bake for 30-35 minutes or until toothpick inserted into center comes out with just a few crumbs attached.
  9. Allow to cool completely and enjoy!

Notes

*Measure 1 heaping cup of shredded zucchini, then place shredded zucchini in a tea towel, paper towel or cheese cloth and squeeze out all of the moisture/water. This is very important!
