Sauté onion in olive oil for 4 minutes. Next, add the garlic followed by the Italian sausage and ground beef, and cook until browned. Add diced tomatoes, tomato sauce, and seasoning and simmer for 45 minutes.
Mix cottage cheese, eggs, Parmesan and Italian seasoning and cook the lasagna noodles until "al dente". Then arrange 4 cooked lasagna noodles in the bottom of a casserole dish.
Spread half the cottage cheese mixture over the noodles, add a layer of mozzarella cheese, then add the meat sauce layer. Repeat all layers and top with Parmesan cheese.
Bake for 20-30 minutes or until the top is hot and bubbly. Then let the lasagna cool for 10-15 minutes before serving. Sprinkle with chopped parsley.
