Sausage and Vegetables Sheet Pan Dinner
Ingredients
- 1 12 oz package pre-cooked Italian sausage cut into ½-inch rounds
- 1 medium red bell pepper sliced into strips about 1 cup
- 1 medium yellow bell pepper sliced into strips about 1 cup
- 1 medium zucchini cut into rounds about 1 cup
- 8 oz cherry tomatoes halved
- ½ red onion sliced into strips
- 3 tablespoons extra virgin olive oil
- 2 teaspoons red wine vinegar
- 2 garlic cloves minced
- ½ teaspoon kosher salt
- 1 tablespoon Italian seasoning
- ¼ teaspoon black pepper
- ¼ teaspoon red pepper flakes
- chopped fresh parsley optional
Instructions
- Preheat the oven to 400°F.
- While the oven is preheating, chop your vegetables.
- In a large bowl or directly on the sheet pan, add the chopped vegetables and drizzle in olive oil and red wine vinegar.
- Next, add the garlic cloves, kosher salt, Italian seasoning, black pepper and red pepper flakes. Toss to combine.
- Arrange ingredients on a baking sheet in a single layer.
- Bake for 25-35 minutes, turning halfway through.
- Remove from the oven and top with chopped parsley. Serve immediately.
