How to Make a Sheet Pan Sausage Dinner

  1. Preheat your oven to 400°F. If you prefer easy cleanup, and line a large baking sheet with foil or parchment paper.
  2. Cut your chosen veggies and sausage into even, bite-sized piece and toss in a large bowl with oils and spices.
  3. Spread them evenly on the sheet pan.

Ingredients

  • 1 12 oz package pre-cooked Italian sausage cut into ½-inch rounds
  • 1 medium red bell pepper sliced into strips about 1 cup
  • 1 medium yellow bell pepper sliced into strips about 1 cup
  • 1 medium zucchini cut into rounds about 1 cup
  • 8 oz cherry tomatoes halved
  • ½ red onion sliced into strips
  • 3 tablespoons extra virgin olive oil
  • 2 teaspoons red wine vinegar
  • 2 garlic cloves minced
  • ½ teaspoon kosher salt
  • 1 tablespoon Italian seasoning
  • ¼ teaspoon black pepper
  • ¼ teaspoon red pepper flakes
  • chopped fresh parsley optional

Instructions

  • Preheat the oven to 400°F.
  • While the oven is preheating, chop your vegetables.
  • In a large bowl or directly on the sheet pan, add the chopped vegetables and drizzle in olive oil and red wine vinegar.
  • Next, add the garlic cloves, kosher salt, Italian seasoning, black pepper and red pepper flakes. Toss to combine.
  • Arrange ingredients on a baking sheet in a single layer.
  • Bake for 25-35 minutes, turning halfway through.
  • Remove from the oven and top with chopped parsley. Serve immediately.
