First, chop your vegetables and sausage and spread out evenly on a sheet pan. Drizzle with olive oil and red wine vinegar.
Next, add the garlic cloves, kosher salt, Italian seasoning, black pepper and red pepper flakes. Toss to combine.
Bake for 25-35 minutes at 400F, turning halfway through. Top with chopped parsley. Serve immediately.
