Cook the squash in the oven until tender, then use a fork to scrape out the "spaghetti" strands and set aside.
Cook the Italian sausage, onion, mushroom and garlic until cooked through. Then add diced tomatoes, Italian seasoning and spinach.
Simmer for 5 minutes, then stir in squash strands and top with cheese. Bake until golden and bubbly.
