Busy schedules call for easy and quick meals that my whole family will love, like this Creamy Sausage Tortellini Skillet with Mushrooms. If you’re like me, you’re probably running in million different directions trying to get everyone where they need to be and checking things off a never-ending to-do list. Let’s not also forget the responsibility of our day jobs...As much as I try to meal prep and plan on the weekends for busy weeknights, sometimes it just doesn’t happen. That’s when I rely on simple, hearty one-pan meals to get my family fed and fed fast!

This Creamy Sausage Tortellini Skillet with Mushrooms comes together in one pan. It tastes like a restaurant-quality meal, without the restaurant price. It is rich in flavor, made with pantry staples and comes together in about 30 minutes. Made with savory mushrooms and sausage, coupled with Italian spices, cheesy and plump tortellini, blended in a rich creamy Italian cheese sauce – perfection! Oh, and throw in some spinach and arugula or kale and you’ve got a complete meal! This hearty creamy sausage tortellini skillet dinner hits the spot when it comes to wanting something quick and easy and full of flavor. It’s going to become a family favorite.

Pair this meal with bread sticks, a salad or roasted vegetables.

Creamy Sausage Tortellini Skillet with Mushrooms

How to Make Creamy Sausage & Mushroom Tortellini Skillet

This one-pan skillet meal comes together in no time! First, sauté the mushrooms in butter and oil until they are brown and tender. Remove them from the skillet and set aside on a plate. Next, crumble and cook the sausage on medium-high heat until fully cooked. Turn off heat and remove the sausage from the skillet and set aside with mushrooms on the plate. Wipe down grease with a paper towel.

Now, add in heavy cream, Italian seasoning, garlic salt, pepper, parmesan cheese, and Italian cheese blend and whisk together over medium heat.

In a small bowl, whisk together chicken broth and cornstarch. Whisk into the sauce and add in the tortellini and spinach & arugula mix. Let simmer for about 5 minutes until the tortellini is cooked, spinach and arugula have wilted and the sauce has thickened.

Ingredients

  • 2 tablespoons butter
  • 2 tablespoons oil
  • 1 cup thinly sliced mushrooms
  • 1 pound ground sausage
  • 2 cups heavy cream
  • 1 tablespoon Italian seasoning
  • 1 teaspoon garlic salt
  • ¼ teaspoon pepper
  • ½ cup grated parmesan cheese
  • ½ cup Italian cheese blend
  • 1 cup chicken broth
  • 3 teaspoons cornstarch
  • 12-ounce cheese tortellini
  • 2 cups spinach or spinach & arugula mix

Instructions

  1. Heat butter and oil in a large saucepan or skillet over medium heat. Cook and stir mushrooms in the butter and oil until mushrooms are browned and tender, about 8 minutes.
  2. Remove mushrooms from saucepan and set aside on a plate.
  3. Cook and crumble the sausage on medium high heat. Once the sausage is fully cooked, remove from skillet and set aside with mushrooms on the plate. Wipe down grease with a paper towel.
  4. Over medium heat, add in heavy cream, Italian seasoning, garlic salt, pepper, parmesan cheese and Italian cheese blend and whisk together.
