Mix the peaches, bourbon, vanilla, sugar, cornstarch and cinnamon well to coat the peaches evenly.
Sift flour, sugar, cinnamon, baking powder and salt together. Cut in the butter until coarse crumbs form, then mix in cream.
Melt butter until it foams and browns, then cook the peaches until heated through. Pour into a baking dish and top with spoonfuls of the dough.
Brush with cream and sprinkle with sugar and cinnamon. Bake until the top is golden brown, then serve with ice cream and enjoy!
