These healthier zucchini brownies are unbelievably rich, moist, and oh-so decadent. You will never know they were made with zucchini! These brownies come together in one bowl too!
Line an 8x8 inch baking pan with parchment paper and spray with nonstick cooking spray.
In a large bowl, add shredded zucchini. Please make sure that you have squeezed out the excess moisture of the zucchini (see notes)*.
Next, add egg, almond butter, honey, brown sugar and vanilla. Stir until smooth.
Gently stir in cocoa powder, mixing until well incorporated.
Next add in all-purpose flour, baking soda and salt and melted butter. Stir until well combined.
Fold in dark chocolate chips
Pour into prepared pan and bake for 30-35 minutes or until toothpick inserted into center comes out with just a few crumbs attached.
Allow to cool completely and enjoy!
Notes
*Measure 1 heaping cup of shredded zucchini, then place shredded zucchini in a tea towel, paper towel or cheese cloth and squeeze out all of the moisture/water. This is very important!
