Ingredients

Greek Dressing

  • 5 tablespoons extra-virgin olive oil
  • 2 tablespoons red wine vinegar
  • 1 tablespoon lemon juice
  • 1 shallot thinly sliced
  • 1 tablespoon fresh oregano chopped
  • 1 teaspoon sea salt
  • ½ teaspoon ground black pepper

Salad

  • 2 pints cherry tomatoes halved
  • 1 English cucumber halved lengthwise and sliced crosswise ⅛ inch thick
  • 1 15-oz. can chickpeas, rinsed and drained
  • ½ cup kalamata olives pitted and chopped
  • 1 cup feta cheese crumbled
  • ¼ cup fresh mint leaves torn

  • In a small bowl, whisk together the extra-virgin olive oil, red wine vinegar, lemon juice, shallots, oregano, salt and pepper. Set aside.
  • In a large serving bowl, add the tomatoes, cucumber, chickpeas, olives and feta cheese. Toss to combine.
  • Pour the dressing over the salad ingredients, then toss gently to combine. Sprinkle with mint leaves. Serve.
