Ingredients
Greek Dressing
- 5 tablespoons extra-virgin olive oil
- 2 tablespoons red wine vinegar
- 1 tablespoon lemon juice
- 1 shallot thinly sliced

- 2 pints cherry tomatoes halved
- 1 English cucumber halved lengthwise and sliced crosswise ⅛ inch thick
- 1 15-oz. can chickpeas, rinsed and drained
- ½ cup kalamata olives pitted and chopped
- 1 cup feta cheese crumbled
- ¼ cup fresh mint leaves torn
