Remove stem and roughly chop up strawberries. Then combine with sugar and cook down, string frequently until the mixture begins to thicken.
Next, mash the berries and stir in lemon juice and salt. Then cool completely and refrigerate.
Whisk milk and sugar until dissolved, then whisk in heavy cream, crème fraiche, condensed milk and vanilla. Cover and refrigerate for 1 to 2 hours.
Pour the milk mixture into the ice cream machine and mix until thickened. Then mix in the strawberry compote and freeze for about 2 hours, or overnight.
