Strawberry Yogurt Popsicles

Summer weather has officially arrived, and these Strawberry Greek Yogurt Popsicles are the perfect solution for a mid-afternoon reprieve from the heat. Made with no sugar added and only 5 ingredients, I can feel good about giving these popsicles to my daughters. Even though I have a major sweet tooth, we don't tend to give our kids food with a bunch of added sugars. So these popsicles are something I can feel good about feeding my daughters. They think they're getting something special, I know it's a healthy option; it's a win-win.

The secret to making these homemade popsicles taste even better is simmering the strawberries in a saucepan. This releases their natural sugars to almost make a delicious syrup. The same effect can be achieved by roasting the strawberries in an oven. But who wants to heat up the kitchen by turning the oven on in the middle of summer?! Not me. I'll take a stove-top fruit reduction during the heat of the summer any day.

Homemade Popsicle Recipes

To make the popsicles creamy, make sure to use a Greek yogurt and milk with a higher fat content. I prefer to use Wallaby Aussie Greek Whole Milk Vanilla Bean Yogurt and whole milk.

Strawberry Greek Yogurt Popsicles

Ingredients

  • 1 ½ cups fresh or frozen strawberries
  • 2 tablespoons honey
  • 2 cups vanilla Greek yogurt
  • 4 tablespoons milk
  • ½ teaspoon vanilla extract
Prevent your screen from going dark.

Instructions

  • Heat the strawberries and honey in a small pot on medium heat and cook down for about 10 minutes, string frequently until the mixture begins to thicken and the strawberries release their juices. Mash the berries with a fork. Remove from heat and cool completely.
  • Whisk the vanilla Greek yogurt, milk and vanilla extract together in a bowl. If needed, add more milk to thin the yogurt out so the consistency is easy to pour into the popsicle molds.
  •  Gently fold the cooled strawberry mixture into the yogurt and add to the popsicle mold. If a marbled or swirly pattern is desired, either do not overmix the strawberry and yogurt mixture OR alternate adding the yogurt mixture and strawberry mixture to the popsicle mold to create layers. Then use a knife to create a marble effect in the mold.
  •  Place the cover on the mold and insert the popsicle sticks about ¾ of the down into the mold and freeze overnight until solid.
