My favorite way to cook most vegetables is by roasting them. The roasting process is the best way to bring out great flavor in any vegetable, including this Green Bean recipe. Green beans are often boiled, resulting in a soggy, squeaky bite that my kids won't touch. But with this recipe and a few simple ingredients, you have a healthy and easy side dish everyone loves!

Roasting green beans can sometimes result in a dry, leathery texture. But with the help of some aluminum foil and a little olive oil, this easy recipe ensures tender green beans with a touch of caramelization that makes this recipe a hit. Not only will your whole family love these fresh beans, but you'll love the short roasting time so you can get this delicious side dish on the table fast! This is the perfect side dish for a weeknight dinner or your holiday table.

Tips for Recipe Success

  • Don't Skip the Sugar: The granulated sugar helps with caramelization, giving the beans that perfect golden-brown color.
  • Toast Your Pine Nuts: Toasting the pine nuts brings out their natural oils and enhances their flavor — you won't want to skip this step!
  • Serve Immediately: These green beans are best enjoyed hot out of the oven while the Parmesan is melty and the beans are crispy.

Ingredient Swaps

  • Nuts: Swap out pine nuts for slivered almonds or chopped walnuts for a different nutty flavor.
  • Cheese: Try Pecorino Romano or Asiago if you're out of Parmesan.
  • Herbs: Basil is delicious, but fresh parsley or mint would also work well.

Storage Instructions

Fresh: Store any leftovers in an airtight container in the refrigerator for up to 3 days. Reheat in the oven or air fryer to maintain crispiness.

FAQs

Can I use frozen green beans?

Fresh green beans work best for this recipe, but if you only have frozen, thaw and pat them dry before roasting.

How do I prevent the green beans from getting soggy?

Dry the green beans thoroughly before roasting, and don't overcrowd the baking sheet. Also, remember to remove the foil during the last 5 minutes of roasting so caramelization can occur.

Can I make this dish ahead of time?

Yes, you can roast the green beans a few hours in advance and then reheat them in the oven. Add the Parmesan, pine nuts, and basil just before serving.
