It doesn’t get any easier than with this simple and delicious summer salad! It’s one of my favorites to serve guests in the spring and summer because it’s so light and refreshing. It’s the perfect salad to make for a crowd since it can be made ahead of time. This salad can also serve as a main dish by topping with a protein like grilled chicken or shrimp. Strawberry Feta Spinach Salad

This perfect summer salad starts with an easy spinach salad recipe as a base. The great thing about this ideal salad recipe is its versatility. You can add in anything you have on hand. My favorite additions are juicy strawberries, fresh blueberries, crunchy pecans and creamy feta cheese. Other great options for salad ingredients include red onions, crunchy almonds, fresh raspberries, creamy avocado, tangy blue cheese or sunflower seeds. You could also swap out the spinach for a blend of baby spinach leaves and fresh spring greens or arugula. The opportunities are endless with this fantastic salad! And the sweet homemade poppy seed dressing pairs perfectly with the fresh fruit and crunchy pecans.

How to Make a Spinach Salad

  1. This fresh spinach salad is versatile so make it your own by adding in salad ingredients that you love. My personal preference is to use fresh berries and pecans, which I used in this recipe.
  2. To get started, start with your greens in a large bowl. Next add the toppings: strawberries, blueberries, pecans and feta cheese. In a separate container or mason jar, combine and whisk the dressing ingredients: mayonnaise, milk, sugar, apple cider vinegar, poppy seeds, dry mustard powder and salt. Toss the salad with the dressing just before serving.
  3. To make this spinach salad ahead of time, combine salad ingredients in a large bowl, cover and store in the refrigerator. Whisk the homemade poppy seed dressing in a mason jar and refrigerate. Toss the salad with the dressing just before serving.
