Overnight Blueberry Baked French Toast

The perfect dish to impress your breakfast crowd, this Overnight Blueberry Baked French Toast is easy to make, tastes delicious and will easily become your family’s favorite.

Nothing wakes up my family faster than the smell of this delicious, easy overnight french toast casserole baking in the oven. It’s my go-to breakfast for a special occasion like Christmas morning, Mother's Day, or when we have house guests. This casserole is easy to put together and made the night before, so there’s no fuss the following day. I even keep a few of these in the freezer for when I need a make-ahead meal or I have to feed a lot of people.

French Toast is one of my favorite breakfasts for a slow Sunday morning. But let’s face it, with two young kids, it’s hard to have a slow morning of any kind. So, this casserole is the perfect solution for my quiet morning daydreams. Not only does it taste exactly, if not better, than slow-Sunday French Toast, it’s prepped the night before so there’s nothing to do but pop it in the oven in the morning.

I prefer to use French bread that is a little crusty and a few days old. This is the best type of bread to soak up all the scrumptiousness and to prevent the casserole from becoming too soggy. Making this casserole overnight also helps the bread sop up the delicious egg mixture too. I promise it’s worth planning ahead to make this! A breakfast casserole is an easy recipe to have in your back pocket 

This make-ahead blueberry french toast bake can be frozen. When I plan on freezing the casserole, I prefer to use a disposable aluminum foil pan so clean up is even more of a breeze (can this tasty meal get any easier?!).

  • Fresh: This casserole can be stored in the refrigerator for up to 3 days. Reheat in the oven at 350°F (175°C) until warmed through.
  • Freeze for Later: Wrap tightly and freeze for up to 2 months. Reheat in the oven for a quick, tasty breakfast. Bake this dish as directed and allow it to cool completely. Wrap in plastic wrap and then aluminum foil and freeze for up to three months. Allow the casserole to defrost in your refrigerator for about 24 hours before reheating. The next morning, uncover and bake at 350°F for about 30 minutes.

FAQs

Why is my French toast casserole soggy

This can happen if you use fresh bread or don't let the casserole rest in the fridge for long enough. Opt for day-old bread and refrigerate for at least 4 hours.

Can I use frozen blueberries?

Absolutely! If you don't have fresh blueberries, you can use frozen. Frozen blueberries don't need to be thawed beforehand and add a lovely burst of flavor.

Ingredients

French Toast:

  • 1 loaf crusty French bread
  • 8 eggs
  • 2 cups milk I prefer whole milk
  • 1 cup heavy whipping cream
  • ½ cup granulated sugar
  • ½ cup brown sugar
  • 2 tablespoons vanilla extract
  • 4 tablespoons butter melted and cooled
  • 1 cup blueberries fresh or frozen

Topping:

  • ½ cup all-purpose flour
  • ½ cup firmly packed brown sugar
  • 2 teaspoon ground cinnamon
  • ½ teaspoon ground nutmeg
  • ¼ teaspoon salt
  • ½ cup cold butter cut into pieces
Prevent your screen from going dark.

Instructions

  • Grease the baking dish with butter.
  • Tear the French bread into chunks and evenly distribute in the pan.
  • Whisk together the eggs, milk, heavy whipping cream, granulated sugar, brown sugar, vanilla, and melted butter.
  • Pour evenly over the bread.
  • Scatter the blueberries over the top.
  • To make the topping, mix the flour, brown sugar, ground cinnamon, ground nutmeg and salt in a separate bowl. Stir together using a fork.
  • With a pastry cutter, gradually work the butter into the flour mixture for about 3 or 4 minutes until it resembles coarse crumbs (about the size of peas) and then scatter over the top of the French toast.
  • Cover and refrigerate until the morning.
  • When you’re ready to bake the French toast, preheat the oven to 350°F.
  • Bake for 45-60 minutes depending on desired texture of the casserole.
